Two new century-old establishments join the vast history and gastronomic tradition that characterizes the Association of Centenarian Restaurants and Taverns of Madrid.
The centenary pastry shop La Mallorquina (1894) and the popular restaurant Las Cuevas de Luis Candelas (1860) are now part of the Association of Centenary Restaurants and Taverns of Madrid (RCM), which includes fourteen establishments with more than 100 years of history.
Las Cuevas de Luis Candelas is one of the most historic restaurants in Madrid. It was founded more than 150 years ago and is located in the central Arco de Cuchilleros, next to the Plaza Mayor. Its name is due to the famous Caves that gave shelter in the 19th century to the most famous bandit of the capital, Luis Candelas. Nowadays, it offers an excellent traditional Madrilenian cuisine, where among others, the Rabo de Toro, the roast suckling pig and lamb in wood oven, the Cocido Madrileño, the Merluza a la Cazuela, or the Callos (tripe) stand out.
For its part, the centenary bakery La Mallorquina, located in the Puerta del Sol, has been offering the most traditional pastry recipes for more than a hundred years, along with the most innovative ones. They were the first to introduce the Roscón de Reyes in Spain and are currently known for one of their best-selling products: the famous Napolitanas, made with cream or chocolate; along with truffles, tea biscuits or bartolillo, an original recipe that today is only found in very few bakeries.
The Association of Centennial Restaurants and Taverns of Madrid brings together establishments that have accumulated the wisdom and know-how of generations of chefs, and today collect the best recipes of the past, combining them with innovation and current technology, consolidating itself as an essential reference in the culinary scene of Madrid.
