Madrid Fusion: Food from Madrid

 

The Community of Madrid participates in the XIX edition of the Global Congress of Gastronomy Madrid Fusion 2021 and has launched around thirty workshops to promote Alimentos de Madrid, M and products certified with the M of Madrid that are part of the Spanish haute cuisine and that have made Madrid a gastronomic reference. 

 

During the three days of #madridfusion2021 at our stand you will be able to learn about the quality of Madrid products. We have organized a special program focused on our products with various presentations and tastings, showcookings, traditional recipes, pairings, presentations or tastings of Wines of Madrid with Designation of Origin, in which 14 master chefs will participate. 

Chef Rodrigo de la Calle, with the help of researchers from the Madrid Institute for Rural, Agricultural and Food Research and Development, will surprise you with innovative methods by applying culinary techniques to vegetables that are normally used for meat. The traditional recipes of the Sierra Norte will be prepared by chef Roberto Capone, chef awarded with the Star of Italian Cuisine. 

Other renowned Spanish chefs who will be part of this unique event are Joan Roca (El Celler de Can Roca), Eneko Atxa (Azurmendi), Ángel León (Aponiente) and Andoni Luis Aduriz (Mugaritz), among others.

In addition, the I Food of Madrid Contest will be held, whose winner will be the one who manages to elaborate the best national recipe with the following products certified with the M of Madrid: seasonal vegetables from Madrid's orchards, oil and cheese and paired with a wine of Madrid with D.O.
