Chinchón

 EAT AND SLEEP

It's time to find a restaurant and enjoy a typical Castilian meal: lamb, suckling pig or kid roasted in a wood oven, occupy a privileged place in most of its restaurants, but you can not forget traditional stews such as garlic soup, stew, stew of vigil and pepitoria. These traditional products will delight those who are looking for a timeless gastronomy.

Special mention should be made of garlic, with a very special flavor, and garden produce: broad beans, peas, artichokes, chard, chinchoneras beans. Do not forget the sheep cheese. A good time to enjoy the gastronomic virtues of the town is the month of November, when the Ruta de la Tapa is celebrated. And, as a recommendation, do not miss the oil and wines, the latter made from Garnacha grapes and included in the Designation of Origin Wines of Madrid.

But if there is one product that has given Chinchón a singular fame, it is aniseed. It is an ancient tradition; already in the 18th century the virtues of this liquor were well known, endorsed by the Geographical Denomination of Chinchón, the only one of its kind in Spain.
